Between 1500 and 1600 Palazzo Vecchio and the surrounding properties of the Fattoria di Valiano belonged to the Ospedale degli Innocenti (hospital of the Innocents) of Florence and was inhabited by brotherhood of monks who cultivated the land.
In 1789 Luigi Chiarini was born in Palazzo Vecchio later becoming a learned scholar in Arabic and Hebraic language. He was ordained abbot in 1814 and was sent to Warsaw University to teach the ecclesiastical history.
At the beginning of the 1900's Palazzo Vecchio was bought by the Angelo Vegni Technical agricultural Institute of the Capezzine and then in then in 1952 by Count Riccardo Zorzi,

from that time its most recent wine growing and producing history began.
In 1987 the Estate acquired the name "Fattoria di Palazzo Vecchio" and the new owners Marco Sbernadori and Alessandra Zorzi were full of innovative ideas, one of which gave origin to a project of promotion and development of Vino Nobile di Montepulciano. The ancient wine cellar underneath the villa was restored and 5 hectares of vineyards, namely "Vigna del Bosco" and "Vigne Valiano" were planted with grapevines for making Vino Nobile. The Fattoria di Palazzo Vecchio's first production of Vino Nobile took place in 1990.
