GRAPPA OF NOBLE WINE

After fermentation, the new wine is transferred into oak barrels for aging, and we begin the process of cleaning up the fermentation lees, grape skins and seeds. These precious ingredients are collected and processed for the distilled 
production of grappa.
In 2014, Palazzo Vecchio will have its first bottles of Grappa di Vino Nobile – it will be a tiny production with labels made by hand, one by one!
