The wines currently on sale at the Palazzo Vecchio are those of the last years, from 2008 to 2011, which are all in the official classification to four stars. Splendid vintages which have allowed us to produce wines of excellent quality as the Noble "Master" and the red "Customs" whose names are linked to the territory and the history of the Valdichiana. The Wine Farm is open daily from 10 am to 12.30 pm and from 15 to 19.
After fermentation, the new wine is transferred into oak barrels for aging, and we begin the process of cleaning up the fermentation lees, grape skins and seeds. These precious ingredients are collected and processed for the distilled
production of grappa.
In 2014, Palazzo Vecchio will have its first bottles of Grappa di Vino Nobile – it will be a tiny production with labels made by hand, one by one!
The 2013 vintage ended with the onset of intense autumn rains, as expected, given the current trends in seasonal climate. The grapes showed a nice accumulation of aromatic substances and the polyphenols were good, having matured slower than in recent years.
The harvest of white grapes for our Vin Santo - Malvasia, Trebbiano and Grechetto – took place in the first half of September as is the tradition at Palazzo Vecchio. The harvest of the red grapes, such as Sangiovese, Mammolo and Canaiolo, came later and promise to be a great vintage.
